JING Tea and Club Gascon exclusive Tea Pairing dinner  (Monday 12th February 2018) 

Michelin-starred French restaurant, Club Gascon, is partnering with luxury tea specialist, JING, to host an exclusive tea pairing dinner of Monday 12th February.

The menu has been created by Chef Pascal Aussignac, Club Gascon’s award-winning Head Sommelier, Julien Sarrasin, and JING’s Head of Tea, Tom Price, combining imaginative dishes inspired by the South West of France with an exclusive range of Chinese teas.

The five-course menu will include Amber tulip flower, verjuice and sweet artichoke, paired with JING rare Mogan Mountain Yellow Tea from Zhejang. Ripe with stone fruit notes, the tea perfectly contrasts with the bitterness of the grapefruit emulsion in the dish.

Crispy foie gras with cranberry and gingerbread canelè will be complemented by the JING Phoenix Honey Orchid Oolong Tea from Guangdong and its bold, complex fruit flavours.

Also featuring on the menu will be Barbecued black cod, oceanic jus, crab and sea urchin pearls paired with JING Organic Dragon Well Supreme Green Tea from Zhejang, its creaminess pairing beautifully with the oiliness of the fish. Lake District beef fillet with dashi, hibiscus & braised red cabbage pairs with JING Red Dragon Black Tea from Yunnan. Tannic, structured and syrupy, the tea complements the red cabbage and rich flavours of braised, mature beef.  

To end, the rich and gently spiced Valrhona Chocolat Variation, Coffee and Cardamom will be balanced by the rich roundness and deep leather, earth and mushroom notes from JING’s 1990s Royal Cooked Pu Erh from Yunnan.

Cloister by Club Gascon... 

As part of its temporary closure whilst the restaurant is undergoing refurbishment, Michelin starred Club Gascon is launching a pop-up at the beautiful cloisters of London’s oldest church, St Bartholomew-the-Great.  

From 13th September – 6th October guests can enjoy a 4-course tasting menu – Cloister by Club Gascon - created by our head chef and founder, Pascal Aussignac. At £80 per guest, the menu includes Club Gascon favourites such as Aromatic King Scallop with Spicy Berries & Frosted Watermelon as well as Peppered Braised Beef Rib with Oceanic Tapioca & Samphire. A vegetarian menu will also be available and guests can pair their experience with a wine flight for an additional £40 as well as a tea pairing for £15.
